Portion Control

Step one: go to pantry, take out box of Jiffy Blueberry Muffin mix. On the back, there’s also instructions for making pancakes instead of muffins.

Step two: mix 1/3 cup of milk (or in my case, Silk Plus DHA) and one egg with the contents of the box. The batter is pretty thick, and you can make two extra large pancakes (think the size of diner or IHOP pancakes). Pro: Jiffy mix is really cheap, so it’s okay that it only makes the two ‘cakes. Con: it’s like a zillion calories (okay, so right around 900 – very close to a zillion).

Step three: burn the second pancake. Char that puppy up so the entire top is black and disgusting. Discard.

Voila! 900 calorie breakfast has just been reduced to a more reasonable 450 calorie breakfast. Sweet. “Butter” your remaining pancake up with some Country Crock Light Spread and light pancake syrup and try not to be bitter.
